A little about me

As you can see I have a range of experience in my field through large group hotels to small independent businesses, giving me I think an ideal perspective in both sectors, I like to go beyond what is expected bringing the more conformed experience from the larger properties to the smaller and vice versa, bringing the more free thinking and less formal to the bigger.

I have at present been working for a smaller company who gives me free rain where the menu is concerned, I like to go beyond what is expected, I like to try different combinations or the way we serve them, it brings a good service to the guest and something different for the staff, both front and back of house, after all we are all constantly still learning.

I thrive on challenges both big and small, love to cook, try new things despite the obvious drawbacks of our industry, I like learning new things and passing on what ive learned through my 30 years of experience.

I am at present working gardening leave, having been made redundant from my present employment and am as such able to start more or less immediately.
