A little about me

Over the last four years I have dealt with covers from 10 to 900, often cooking in extreme conditions with a brigade I have only just met, and we have worked together to produce AA Rosette standards meals in a very tight time-frame. This always calls for a very calm temperament, quick level thinking and a good sense of humor which I believe I possess. I particularly enjoyed working for a couple over in Bermuda when they opened a brand new restaurant and even joined them a few years later in Canada for about four months to help start up their next venture. I have been very lucky over the last three years working at the Twickenham Stadium for a great Executive Chef called Ryan Matthee, who placed me in the patisserie and I learnt how to produce exquisite pastries for the corporate boxes, adding another skill to my list. During the summer I was lucky to work with the Roux Brothers covering the Henley Regatta.
