Good seasonal buying produce from local food suppliers include;

 

Fresh fish Produce

This months fresh fish quoted from Sea fresh Seafoods, Dorset's local catering supplier of fresh fish.

Talking to Adi at Sea Fresh Seafoods and his team in Poole, Dorset where they certainly try to supply local chefs the best fresh fish and seafood to there specifications, have kindly come up with some fish and specials to watch over January.

Hello, the cold storms have arrived and the nice warmth we had gone ..!  The cold is bringing in some good local cod is being caught either by line or of shore, pollock and whiting are still good and at a good price, bream at reasonable rates, Salmon is at a really good price, nice oysters and nice little plate size local flatties are also coming in and not a bad price along with some nice lemon & lovely local plaice. For something different, Monk, butterfly Trout, butterfly herring, 

  Still a few local bass around with a whopping 6lb coming out of Weymouth and ill expect see more local bass coming in later this month as the weather warms up again! local conger makes something a little different on the menu with a local conger record being pulled from the jurassic coast last month! Spanish mackerel also good and are coming coming closer to our shores, ill expect to see local macs in later in April. mussels..Mmmm there are a little tempermental, a bit of hit and miss to be honest, just the wrong side of the year for them but ill tell you what there like as you place your orders!  Some excellent Cornish monk fish, local red mullet, dovers are in really good condition as well as good Turbot, though expect some fish prices to go up and down a bit this month due to demand and getting out to sea.

Good menu suggestions would be local trout fillet, pan fried fillet of bream,  local conger, local cod, butterfly sardines and making some homemade rollmops, cannon or stuffed wheels using the local flatties and whiting.. good mussels coming in !! 

 

Seasonal Vegetables

 Gavin at Country Fare, One of Dorset's premier fruit & vegetable catering suppliers. A family run traditional vegetable supplier that likes to source as much as possible locally has given his low down of this months spring vegetable produce. 


Winter it is !! Winter is on ! the harvest is in ! We can now look to relish in the colours of full spring just around the corner with relish as  the days get hopefully longer soon !


A great month with many different things coming in and out, coming in are some juicy baby local sweet root vegetables and sweet baby leafy green greens and beets are coming up from Spain along with New Forest wild mushrooms and the first french asparagus is showing already ! Starting to see the last of the rhubarb, the last of the sprouts, baby carrot and some unusual roots along with an old friend -salsify and the first jersey royals should appear as well. Romanesco adds a different touch to your veg selection. The Dutch and Spanish salad products are now just showing which will be overtaken slowly by the English produce. Italian pear, blueberries and strawberries are good along with orange,with some French produce coming in like the strawberries, next month I expect to see our locally sourced produce making more of an appearance at the end of March.

This month I would expect a few prices fluctuate a little, like on strawberries, salads, tomatoes, courgettes, new potatoes and aubergines as produce comes in and goes out the door with spring !  Plenty of local roots, parsnips and Broccoli have been good buys.

Butchery produce 

 Talking to the gang at Springfield catering butchers, Dorset, producing some excellent home produce, like there sausages & burgers, sourcing when possible locally available quality meat

This month sees some excellent local raised baby lamb prices are fluctuating a bit due to this months demand but we are talking really nice lamb, lambs liver is also excellent, There are some great local raised pork joints as well, loin is excellent, fillet as always, fantastic shoulder with great crackling and pork belly just ready to be slow roasted with some cider, garlic bay and spiced up and maybe with a hint of the start of the seasons smoked wild garlic ! with a roast apple it adds the perfect apple sauce !

Some wonderful prime beef, prices are steady, and we have some really good marbled striplions of beef, rib eye are a good price, along with sandwich steaks that can be rolled and filled with some wild game or a medley of maybe some roasted vegetable or confit .. Expect some great tasting beef as the cow is now grazing on the spring luscious grass.

Other things to consider

Turkey plentiful, wild fowl is in in in !!.. nice local pigeon, duck and venison and why not try something different on your menu, -  various cheek ( like pork) , offal and sweetbreads and rabbit .

Vegetables
 Beetroot, red, white and green cabbages, celeriac, kohlrabi, leeks, onions, potatoes, spinach and chard.

Fruit and nuts The last of the English apples, pears and nuts, forced Rhubarb.

Game Matured partridge, pheasant, mallard, pigeon, rabbit and hare.

Fish Brill, Cod, flounder, John Dory, Langoustine, good Trout and Scallops.

 


 

Vegetables Brussels sprouts, Brussels tops, salsify and shallots.

Game Feathered game now at an end, except for varieties of wild Duck. wild Rabbit and Hare, good Froi Gras prices.

Fish - Flatties Lemon Sole and other Flat Fish. Wild Salmon season begins, some good fat Mussels, but start to decline now, Clams start to be a good idea


 


Fruit The first Rhubarb.

Game Pigeon, Rabbit and Hare.

Fish Mackerel, Halibut, Pollock and Bass.  fish start spawning now so their quality declines.

Vegetables Calabrese, purple sprouting Broccoli, Carrots, Spring Greens, spring Onions, Baby Shoots, Black Truffle season ends, Edible Flowers, Wild fennel showing and look out for Elderflowers.

 



Vegetables Spring Greens, Cabbages and Carrots. All winter root vegetables are now ending,new Potatoes from the south west come in. baby Leeks and the first English Lettuces and other salad leaves. The short Morel mushroom season begins. look out for wild garlic flowering.

Fruit Height of the Rhubarb season.

Meat Spring Lamb, good Calves Liver.

Game Pigeon, Rabbit and Hare.

                                                                   Fish The first Crabs, Salmon, Trout, Lobster, Shrimps and rod line caught Bass & Mackerel, striped mullet moving in. 

 



Vegetables The asparagus season. The first Broad Beans, Spinach, Sorrel and Primo cabbage. Fancy baby Tomatoes, Seaweed

Meat New-season Lamb continues.

Fish Spring Lobster, Haddock and Prawns, Pollock, Herring and rod line caught Bass.

 

 


Vegetables

Fish  Plaice just beginning and Squid from Scotland. The best month for Crab and shell fish like Lobster, Prawns Scallop, Razor Clams and Shrimps. Bass are still around along with Bream and rod line caught fish

Fruit Plums, Cherries, Apricots, Loganberries, Strawberries.

Game Grouse season from the 12th onwards.

Fish Dover Sole, Grey Mullet, Haddock, Herring, Pilchards and Red Mullet, Bass and rod line caught fish.

Game Wild feathered game - Duck, Partridge, Teal, Pigeon, Venison and Grouse.
